Ingredients
For the Burgers:
1½ lbs ground beef (80/20 blend)
8 slices cheddar cheese
4 brioche burger buns
1 teaspoon salt
½ teaspoon black pepper
1 tablespoon butter
For the Caramelized Onions:
3 large yellow onions, thinly sliced
2 tablespoons butter
1 tablespoon olive oil
½ teaspoon salt
1 teaspoon brown sugar (optional)
For the Burger Sauce:
¼ cup mayonnaise
2 tablespoons ketchup
1 teaspoon mustard
1 teaspoon pickle juice
½ teaspoon garlic powder
Instructions
1. Caramelize the onions: Heat butter and olive oil in a skillet over medium-low heat. Add sliced onions and salt. Cook for 20–30 minutes, stirring occasionally, until golden brown and sweet. Add brown sugar if desired.
2. Prepare the sauce: Mix mayonnaise, ketchup, mustard, pickle juice, and garlic powder in a small bowl. Refrigerate until ready to use.
3. Shape the patties: Divide ground beef into 8 equal portions and gently shape into thin patties.
4. Cook the burgers: Heat a cast-iron skillet over medium-high heat. Season patties with salt and pepper. Cook for 2–3 minutes per side, depending on thickness, until the centers reach 160°F (71°C).
5. Melt the cheese: Place one slice of cheddar on each patty during the final minute of cooking. Let it melt.
6. Toast the buns: Spread butter on the cut sides of the brioche buns and toast until golden brown.
7. Assemble: Spread burger sauce on the bottom buns. Stack two cheesy beef patties on each bun, add a generous portion of caramelized onions, and finish with the top buns.
