Ingredients You’ll Need:
4 medium russet potatoes
2 tablespoons olive oil
2 tablespoons unsalted butter, softened
1/4 cup sour cream
1/4 cup milk
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1 1/2 cups shredded cheddar cheese, divided
2 tablespoons chopped green onions, plus more for garnish
1 tablespoon chopped fresh parsley (optional)
How to Make It:
Scrub the potatoes clean and pat them dry. Rub each potato with olive oil.
Preheat your air fryer to 400°F (200°C) for 3–5 minutes.
Place the potatoes in the air fryer basket and cook for 35–40 minutes, turning halfway through, until fork-tender.
Allow the potatoes to cool for 5–10 minutes.
Slice each potato in half lengthwise and carefully scoop the flesh into a mixing bowl, leaving a thin layer of potato inside each skin.
Add the butter, sour cream, milk, garlic powder, onion powder, salt, black pepper, half of the shredded cheddar cheese, and green onions to the potato flesh. Mash until smooth and creamy.
Spoon the mixture back into the potato skins, mounding it slightly.
Sprinkle the remaining cheddar cheese evenly over the tops.
Return the stuffed potatoes to the air fryer and cook at 375°F (190°C) for 5–7 minutes, or until the cheese is melted, bubbly, and lightly golden.
Garnish with additional green onions and parsley before serving.
Tips for the Best Loaded Baked Potatoes:
Choose potatoes that are similar in size for even cooking.
Don’t scoop out too much potato—leave a thin layer to help the skins hold their shape.
Freshly shredded cheddar melts more smoothly than pre-shredded cheese.
For an extra crispy skin, brush the potato shells lightly with olive oil before refilling.
Add a sprinkle of paprika or your favorite seasoning for extra flavor.
