I regret I ever came across this recipe. I brought it to a work potluck a while back and now everyone insists that I bring it every time! I think I’m on the hook for good.
I love this quick & easy recipe, and it’s such a treat for beginners — flaky, cheesy, and absolutely irresistible!
🧾 Ingredients:
2 sheets puff pastry, thawed
2 cups fresh spinach (or frozen, thawed and drained well)
1 cup ricotta cheese
1/2 cup feta cheese, crumbled
1/2 cup mozzarella cheese, shredded
1 egg (for filling)
1 egg yolk (for brushing)
1 tbsp olive oil
Salt and black pepper, to taste
Sesame seeds, for topping (optional)
👩🍳 Instructions:
- Preheat your oven to 190°C (375°F).
- In a bowl, mix together spinach, ricotta, feta, mozzarella, egg, olive oil, salt, and pepper until well combined.
- Place one sheet of puff pastry on parchment paper and spread the spinach-cheese filling evenly on top, leaving the edges free.
- Cover with the second pastry sheet, seal the edges with a fork, and score into squares using a knife (don’t cut all the way through).
- Brush the top with egg yolk and sprinkle sesame seeds if desired.
- Bake for 25–30 minutes, or until golden and puffed.
- Let cool slightly, then cut fully along the scored lines and serve warm.
🌿 Tips:
You can add chopped herbs like parsley or dill for extra flavor.
Serve with a side salad or yogurt dip for a light meal.
