Skillet Cornbread

Ingredients :

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • ¼ cup sugar (optional, for a touch of sweetness)
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 2 large eggs
  • ¼ cup melted butter (plus 1 tablespoon for the skillet)

Instructions :

  1. Preheat oven to 425°F (220°C). Place a 9-inch cast-iron skillet in the oven while it heats.
  2. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, mix buttermilk, eggs, and melted butter until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir just until combined — don’t overmix.
  5. Carefully remove the hot skillet from the oven and add 1 tablespoon of butter, swirling it to coat the bottom and sides.
  6. Pour the batter into the hot skillet; you should hear a light sizzle.
  7. Bake for 20–25 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
  8. Let it cool slightly before slicing.
  9. Serve warm with butter, honey, or alongside collard greens and fried chicken — a true taste of the Southern table.
