Pineapple Bake

Ingredients

•1 can (20 oz / 565 g) crushed pineapple, undrained

•4 large eggs

•1 cup granulated sugar

•½ cup melted butter

•2 cups soft bread cubes or day-old white bread, cut into chunks

•½ teaspoon vanilla extract

•¼ teaspoon salt

Optional additions (not visible but commonly used):

•¼ cup brown sugar for extra caramelization

•½ teaspoon cinnamon or nutmeg for warmth

Instructions

1.Preheat the Oven

Preheat your oven to 175°C (350°F). Lightly grease a square or rectangular glass baking dish similar to the one shown in the image.

2.Prepare the Custard Base

In a large bowl, whisk the eggs until well beaten. Add the sugar, melted butter, vanilla extract, and salt, mixing until smooth and fully combined.

3.Add the Pineapple

Stir in the crushed pineapple along with its juice. This liquid is essential for creating the moist, custard-like texture seen in the baked dish.

4.Incorporate the Bread

Gently fold the bread cubes into the pineapple mixture, ensuring all pieces are soaked. The bread will absorb the custard and rise slightly during baking, forming the soft squares visible on top.

5.Transfer to Baking Dish

Pour the mixture evenly into the prepared dish. Lightly press the bread pieces down so they sit evenly across the surface.

6.Bake

Bake uncovered for 45–55 minutes, or until the top is golden brown and set. The edges should be slightly crisp while the center remains soft and custardy.

7.Cool Slightly Before Serving

Allow the Pineapple Bake to rest for 10–15 minutes before slicing. This helps the structure firm up while keeping the interior creamy.
