Fluffy Mini Pancakes

Ingredients

250 ml milk (warm)

1 egg

1½ tbsp sugar

½ tsp salt

1½ cups (190 g) all-purpose flour

2 tsp baking powder

1 tbsp melted butter (optional, for extra softness)

Butter or oil for cooking


👩‍🍳 Instructions

  1. Mix wet ingredients:
    In a bowl, whisk together milk, egg, sugar, and salt until well combined.
  2. Add dry ingredients:
    Sift in the flour and baking powder. Mix until you have a smooth, thick batter (similar to cake batter).
    Optional: Add melted butter for richer flavor.
  3. Cook:
    Heat a nonstick pan over low-medium heat. Lightly grease it with butter or oil.
    Pour small rounds of batter (about 2 tbsp each).
  4. Flip:
    When bubbles appear on the surface and the edges start to set, flip and cook the other side until golden brown and puffed up.
  5. Serve:
    Stack them up and serve warm with honey, maple syrup, Nutella, or fresh fruit 🍓🍯
