This Lemon Mochi is beyond addictive! It’s the perfect balance of chewy, sweet, and tangy, and once you start, it’s hard to stop. My husband is obsessed—every time we finish a batch, he’s already asking when I can make it again! So, I’m sharing this recipe because it’s a family favorite. Not only will you be making a treat everyone loves, but you’ll also get a recipe that keeps them coming back for more.
Ingredients:
1 cup glutinous rice flour (mochi flour)
1/2 cup sugar
1/4 tsp baking soda
1/2 cup lemon juice (freshly squeezed)
1/2 cup water
Cornstarch (for dusting)
Preparation:
- In a bowl, mix glutinous rice flour, sugar, and baking soda.
- Slowly add lemon juice and water while stirring until smooth.
- Pour the mixture into a heatproof bowl.
- Steam the mixture over medium heat for 20-25 minutes, stirring occasionally.
- Once the dough thickens and becomes firm, remove from heat and let it cool.
- Dust a flat surface with cornstarch. Take a small portion of the dough, roll it into a ball, and coat with cornstarch to prevent sticking.
- Repeat with the rest of the dough.
- Let it cool completely before serving.
Enjoy this sweet and tangy mochi as a delightful snack or dessert!
Tips:
Serve chilled or at room temperature for the best texture.
