Ingredients:
For the Meatloaf:
1 lb ground beef
1/2 lb ground pork (optional, for added flavor)
1 egg
1 cup breadcrumbs
1/2 cup milk
1 small onion, finely chopped
2 cloves garlic, minced
1 tsp dried oregano
1 tsp dried thyme
1/2 tsp salt
1/4 tsp black pepper
1 tbsp Worcestershire sauce
1/2 cup shredded mozzarella cheese (or your favorite cheese)
1/2 cup grated Parmesan cheese
For the Topping:
1 large onion, thinly sliced
2 tbsp butter
1/2 cup shredded cheese (mozzarella, cheddar, or a mix)
Fresh parsley, chopped (for garnish)
Instructions:

  1. Prepare the Meatloaf:
    Preheat the oven to 375°F (190°C).
    In a large bowl, combine the ground beef, ground pork (if using), egg, breadcrumbs, milk, chopped onion, minced garlic, oregano, thyme, salt, pepper, and Worcestershire sauce. Mix until just combined.
    Add the mozzarella and Parmesan cheeses and mix gently.
    Transfer the meat mixture into a greased loaf pan and shape it into a loaf.
  2. Caramelize the Onions:
    In a skillet, melt the butter over medium heat. Add the thinly sliced onion and cook, stirring occasionally, for about 10-15 minutes, until the onions are soft and caramelized. Set aside.
  3. Bake the Meatloaf:
    Place the meatloaf in the preheated oven and bake for 40 minutes.
    After 40 minutes, remove the meatloaf from the oven and top it with the caramelized onions. Sprinkle the additional cheese on top of the onions.
    Return the meatloaf to the oven and bake for another 10-15 minutes, until the cheese is melted and bubbly, and the meatloaf is cooked through.
  4. Serve:
    Remove the meatloaf from the oven and let it rest for 5-10 minutes before slicing.
    Garnish with fresh parsley and serve alongside mashed potatoes, vegetables, or a fresh salad.
    Notes:
    Storage: Leftover meatloaf can be stored in an airtight container in the refrigerator for up to 3 days. It also makes a great leftover sandwich!
