Ultimate Fruit Cake Loaf

Ingredients:

2 cups (250g) all-purpose flour

1½ tsp baking powder

¼ tsp salt

½ cup (120g) unsalted butter, softened

¾ cup (150g) granulated sugar

2 large eggs

1 tsp vanilla extract

½ cup (120ml) milk

1½ cups (200g) mixed dried fruits (raisins, cherries, apricots, cranberries, etc.)

1 tbsp orange zest (optional)

1 tbsp lemon juice (optional)


Instructions:

  1. Preheat the oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In another large bowl, beat the softened butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  5. Gradually add the dry ingredients alternately with milk, beginning and ending with the flour mixture.
  6. Gently fold in the dried fruits, orange zest, and lemon juice if using.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Store in an airtight container at room temperature for up to 4 days, or refrigerate for up to a week.
