Ingredients:
2 racks pork ribs (baby back or spare ribs)
3 tbsp olive oil
1 tbsp paprika (smoked if possible)
1 tbsp garlic powder
1 tbsp onion powder
1 tsp black pepper
1 tsp cayenne pepper (optional for heat)
2 tsp salt
½ cup apple cider vinegar or lemon juice (for tenderizing)
For the BBQ glaze:
1 ½ cups BBQ sauce (your favorite)
2 tbsp honey or brown sugar
1 tbsp Worcestershire sauce
1 tsp chili flakes (optional)
Instructions:
- Prep the ribs
Remove the thin membrane from the back of the ribs (for tenderness).
Rinse and pat dry.
- Season
Mix olive oil with paprika, garlic powder, onion powder, salt, pepper, and cayenne.
Rub generously all over the ribs.
Let marinate for at least 30 minutes (overnight if possible).
- Bake low and slow
Preheat oven to 150°C (300°F).
Place ribs on a baking tray lined with foil. Cover tightly with more foil.
Bake for 2.5 to 3 hours until tender.
- Make the glaze
In a saucepan, heat BBQ sauce, honey (or brown sugar), Worcestershire, and chili flakes. Simmer 5 minutes.
- Glaze and broil
Remove ribs from the oven, discard the top foil.
Brush generously with BBQ glaze.
Broil (or grill) for 5–10 minutes until caramelized and sticky.
- Serve
Rest for 5 minutes, cut between bones, and serve hot.
