Ingredients

For the Cake:

2 cups (250g) all-purpose flour

1½ teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon ground allspice

¾ cup (170g) unsalted butter, softened

1 cup (200g) packed brown sugar

3 large eggs, at room temperature

¼ cup molasses or honey

¼ cup orange juice

1 teaspoon vanilla extract

2 cups mixed dried fruits (raisins, currants, and chopped dates)

½ cup chopped candied cherries or glazed fruits

Instructions

Step 1: Prepare the Oven and Pan Preheat your oven to 325°F (160°C). Grease a 9-inch (23cm) round cake pan or loaf pan and line the bottom with parchment paper. Lightly grease the parchment paper as well.

Step 2: Prepare the Dry Ingredients In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and allspice. Set aside.

Step 3: Prepare the Fruit In a separate bowl, combine the raisins, currants, chopped dates, and candied cherries. Toss with 1 tablespoon of the measured flour mixture to help distribute the fruit evenly throughout the cake.

Step 4: Cream the Butter and Sugar In a large mixing bowl, beat the softened butter and brown sugar together for 3–4 minutes until light and fluffy.

Step 5: Add the Wet Ingredients Add the eggs one at a time, beating well after each addition. Mix in the molasses or honey, orange juice, and vanilla extract until combined.

Step 6: Combine the Batter Gradually add the dry ingredients to the wet mixture, mixing on low speed just until combined. Avoid overmixing. Gently fold in the dried fruit and candied cherries using a spatula.

Step 7: Bake the Cake Pour the batter into the prepared pan and spread it evenly. Bake for approximately 60–75 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.

If the top starts browning too quickly, loosely cover it with aluminum foil during the final part of baking.

Step 8: Cool and Serve Allow the cake to cool in the pan for 15 minutes, then carefully transfer it to a wire rack to cool completely. For the best flavor and texture, wrap the cooled cake and let it rest overnight before slicing.

Tips for the Perfect Fruit Cake

Use room-temperature ingredients for a smooth, evenly mixed batter.

Do not overmix once the flour is added.

Chop larger dried fruits into small, even pieces.

For extra flavor, soak the dried fruits in orange juice for 20–30 minutes before adding them. Drain excess liquid before using.

Bake at a low temperature to help the cake cook evenly without drying out.

Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.

Serving Suggestions

Serve each slice plain, dusted with powdered sugar, or topped with a little whipped cream. A cup of coffee or tea makes the perfect pairing!
