For the Cookies:

1 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
2 tsp vanilla extract

For the Icing:

2 cups powdered sugar
2–3 tbsp milk
1 tbsp melted butter
Β½ tsp vanilla extract
Red and green food coloring
Christmas sprinkles, optional

Step 1 – Make the Dough
Beat the softened butter and sugar until light and fluffy. Add the egg, vanilla, and almond extract and mix until combined.

Step 2 – Add the Dry Ingredients
In a separate bowl, whisk together flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture and mix until a soft dough forms.

Step 3 – Chill the Dough
Divide the dough into two portions, flatten into discs, wrap, and refrigerate for at least 1 hour.

Step 4 – Cut the Cookies
Preheat oven to 350Β°F (175Β°C). Roll the dough out to about ΒΌ-inch thickness on a lightly floured surface. Cut into Christmas shapes such as stars, trees, and snowflakes.

Step 5 – Bake
Place cookies on a parchment-lined baking sheet. Bake for 8–10 minutes, just until the edges are lightly golden. Don’t overbake if you want soft cookies.

Step 6 – Decorate
Let the cookies cool completely. Mix the icing ingredients until smooth, divide and tint with food coloring, then decorate the cookies with icing and festive sprinkles.
