Ingredients
1 cup yellow cornmeal
1/2 tsp salt
1/2 tsp sugar (optional)
1/4 cup all-purpose flour
3/4 cup buttermilk or milk
1 large egg
Vegetable oil for frying
Instructions
In a mixing bowl, combine cornmeal, salt, sugar, and flour.
Add buttermilk and egg, stirring until a thick batter forms. The mixture should be thick enough to hold its shape when spooned.
Heat about 1/2 inch of vegetable oil in a skillet over medium heat until hot.
Drop spoonfuls of batter into the hot oil and gently flatten into small patties.
Fry for 2 to 3 minutes per side until golden brown and crispy.
Remove and drain on paper towels.
Serve hot with beans, greens, chili, or a drizzle of honey.
