Oatmeal Carrot Cake
This Oatmeal Carrot Cake is super easy to make, and with its delicious mix of carrots, nuts, and dried fruits, it’s a great treat to enjoy regularly!
Ingredients (Serves 8-10):
- Carrots: 4 medium (200 g), grated
- Orange Zest: From 1 orange
- Eggs: 3 large
- Sweetener: Optional, to taste (erythritol, stevia, or sugar)
- Vegetable Oil: 80 ml (1/2 cup)
- Walnuts: 1 cup, chopped (reserve some for decoration)
- Almonds: 1/2 cup, chopped
- Dried Apricots: A small handful, rinsed and dried
- Plums: A small handful, rinsed and dried
- Oatmeal: 1 cup
- Baking Powder: 10 grams (2 teaspoons)
- Salt: A pinch
- Cinnamon: To taste
- Nutmeg: Optional, to taste
- Vanilla Extract: 1 teaspoon
Instructions:
- Preheat your oven to 180°C (350°F) and grease a loaf pan.
- Prepare the ingredients: Grate the carrots and zest the orange. Chop the walnuts, almonds, apricots, and plums.
- Mix the wet ingredients: In a large bowl, beat the eggs, then add the vegetable oil, vanilla extract, and sweetener (if using). Stir well.
- Combine the dry ingredients: In a separate bowl, mix the oatmeal, baking powder, salt, cinnamon, and nutmeg (if using).
- Combine both mixtures: Add the grated carrots, orange zest, dried fruits, and nuts to the wet mixture. Gradually stir in the dry ingredients until well combined.
- Bake the cake: Pour the batter into the prepared loaf pan and bake for about 45–50 minutes, or until a toothpick inserted in the center comes out clean.
- Cool and serve: Let the cake cool before serving. Decorate with some reserved walnuts for extra crunch.
