1 cup glutinous rice flour (mochi flour)

1/2 cup sugar

1/4 tsp baking soda

1/2 cup lemon juice (freshly squeezed)

1/2 cup water

Cornstarch (for dusting)

Preparation:

  1. In a bowl, mix glutinous rice flour, sugar, and baking soda.
  2. Slowly add lemon juice and water while stirring until smooth.
  3. Pour the mixture into a heatproof bowl.
  4. Steam the mixture over medium heat for 20-25 minutes, stirring occasionally.
  5. Once the dough thickens and becomes firm, remove from heat and let it cool.
  6. Dust a flat surface with cornstarch. Take a small portion of the dough, roll it into a ball, and coat with cornstarch to prevent sticking.
  7. Repeat with the rest of the dough.
  8. Let it cool completely before serving.
