Ingredients :
- 1 cup cornmeal
- 1 cup all-purpose flour
- ¼ cup sugar (optional, for a touch of sweetness)
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 cup buttermilk
- 2 large eggs
- ¼ cup melted butter (plus 1 tablespoon for the skillet)
Instructions :
- Preheat oven to 425°F (220°C). Place a 9-inch cast-iron skillet in the oven while it heats.
- In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, mix buttermilk, eggs, and melted butter until smooth.
- Pour the wet ingredients into the dry ingredients and stir just until combined — don’t overmix.
- Carefully remove the hot skillet from the oven and add 1 tablespoon of butter, swirling it to coat the bottom and sides.
- Pour the batter into the hot skillet; you should hear a light sizzle.
- Bake for 20–25 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
- Let it cool slightly before slicing.
- Serve warm with butter, honey, or alongside collard greens and fried chicken — a true taste of the Southern table.
