Almond Joy Coconut Bites

Ingredients & Their Roles

  • 2 cups sweetened shredded coconut – Creates the rich, chewy base and signature coconut flavor.
  • 1/2 cup powdered sugar – Adds sweetness and helps bind the mixture for a smooth texture.
  • 1/4 cup melted coconut oil – Acts as a natural binder and enhances the coconut taste while helping the bites firm up.
  • 1 teaspoon vanilla extract – Deepens the flavor and balances the sweetness.
  • 1/4 teaspoon salt – Enhances every ingredient and keeps the sweetness from becoming overpowering.
  • 16 whole almonds (unsalted) – Adds the iconic crunch at the center of each bite.
  • 1 cup dark or milk chocolate chips – Provides the smooth, decadent coating that makes these bites irresistible.

How to Make Almond Joy Coconut Bites

1. Prepare the Coconut Mixture

In a bowl, mix together the shredded coconutpowdered sugar,
coconut oilvanilla extract, and salt.
Stir thoroughly until the mixture becomes sticky and well combined.

2. Form the Bites

Scoop out small spoonfuls and shape into compact balls. Gently flatten each one,
then press a whole almond into the center. Shape the coconut around the almond
so it’s snug and secure.

3. Chill to Firm

Place the formed bites on a parchment-lined baking sheet and refrigerate for
at least 30 minutes, allowing them to firm up and hold their shape.

4. Melt the Chocolate

Microwave the chocolate chips in 30-second increments, stirring between
each round until smooth, glossy, and perfectly melted.

5. Dip the Bites

Once chilled, dip each coconut-almond ball into the melted chocolate, coating
it completely. Return to the parchment paper so the coating can set properly.

6. Chill Again

Place all coated bites back into the refrigerator for 15–20 minutes
until the chocolate hardens into a crisp shell.

7. Enjoy!
